Shawarma Broccolini with Tahini and Pine Nuts

Shawarma Broccolini with Tahini and Pine Nuts

This recipe is perfect to go with any meal. It is 100% vegan and delicious. This side goes well with any chicken meal, beef meal, or simply just to eat by itself. Enjoy!

Ingredients:

For the Broccolini

  • 2 bunches of broccolini
  • 1-2 tbs Shawarma Spice
  • 1 tbs sweet paprika
  • 1 Lemon
  • Pinch of salt
  • Pinch of black pepper
  • olive oil (enough to coat broccolini)

For the Tahini

  • 1/4 cup of tahini
  • lemon (to taste)
  • cool water (to taste)
  • pinch of salt

Pine Nuts

  • 3 tbs pine nuts
  • olive oil

Directions:

  • Preheat the oven to 400 degrees Fahrenheit
  • In a baking pan add the broccolini and coat it with olive oil
  • Add the shawarma spice, sweet paprika, salt, and pepper
  • Roast in preheated oven for about 10-15 mins, until the broccolini is nice and crispy, but not burnt (remember to flip broccolini halfway through in the oven)
  • While the broccolini is in the oven, make your tahini by adding your tahini, salt, lemon, and water into a bowl and mix.
    • make sure the tahini isn’t too runny, you want a perfect medium between thick and watery, and add water or lemon juice as needed for taste
  • Once the tahini is ready, add oil to a pan and roast your pine nuts until the get a golden brown color
  • Once the broccolini is ready take it out of the oven and add the pine nuts on top of it and drizzle the tahini onto it. Add lemon wedges to the side of the plate to add flavor.
