Try this delicious salmon. The whole family will love it! It pairs great with white wine and some of my crispy potatoes. Don’t forget everything tastes better with a bit of love 🙂

Ingredients:
- 4 salmon fillets
- 2 lemons
- 75 g of cream cheese
- 1/3 cup of milk
- 1 tsp olive oil
- 2 cups spinach
- 3 garlic cloves
- tsp rosemary
Directions
- Soak the salmon in lemon juice covered with 1 sliced lemon for about 10-60 minutes
- Preheat the oven to 200 C (400 F)
- Cut the 2nd lemon into two and zest and juice 1/2 and slice the other half
- In a pan, add the olive oil and garlic and cook for about a minute, but don’t let the garlic brown
- To the pan add the spinach, zested lemon, and lemon juice and let cook
- Add in the cream cheese and the milk and stir regularly until the spinach is wilted
- In an oven-safe dish add the sliced lemon and place the salmon on top
- Pour the sauce onto the salmon
- Add the rosemary on top of the salmon
- Bake in the oven for 15-20 mins
- Serve and Enjoy 🙂
